This Cabenet Sauvignon from French origins uses versatile grape produces exceptional wines around the globe. It's usually medium to full bodied with a fine structure that supports black and red fruit flavors with typical notes of olive, chili and herbs that add complexity. This is a beautiful deep red wine that exudes a beautiful strawberry jam bouquet. The wine has a strong tannin backbone with a deep purple rim coated with black and red currants. This wine, despite being very approachable now, is complex and will improve with a little age. The Paripaso achieves its highest quality when paired with medium-well cooked meats such as roast beef, duck, roasted chicken, grilled beef, and smoked chicken.
The Paripaso is produced at the Daou Vineyards in a one hundred acre premium vineyard estate located at 2,200 feet in the Adelaida Mountains of Paso Robles, California. Founded in 2007 by brothers Daniel and Georges Daou, the estate primarily focuses on Bordeaux varieties and also features Zinfandel and Rhone blends. Daou Vineyards’ exquisite terroir with its calcareous, high percentage limestone soils, maritime influence and unique climate represent the perfect storm for creating classic wines that can rival the worlds best. Discovered by the great wine master Andre Tchelistcheff in the 1960s, Daou's terroir was referred by him as, "A jewel of ecological elements." In 2008, Georges and Daniel Daou continued Tchelistcheff's vision by planting twenty-six acres and focusing on Bordeaux varieties.
