About the Winery: Like any good story, it has a love story at its heart. In this case, that of Martine Clerc and Michel Chouvet, which started back in the 1970's. Martine came from Violès, Michel from Bédarrides. Both brought vines and a shared love of their craft into the marriage. Their dream of independence took shape as the domaine gradually grew in size and became a reality with the creation of the "Domaine de Fontavin" winery in 1989. Following in the footsteps of her father, Hélène Chouvet Coton became an oenologist and started working with her parents in 1996. Since then she has continued along her chosen route and now manages the domaine. Each appellation has its typical character and terroir, and to these Domaine de Fontavin adds its vines, roots, images and aromas. Hélène's wines are the distillation of family memories and the expression of her own sensibility.

About the Wine: Located in the heart of the Dentelles de Montmirail, at high altitude of about 1312 feet, soil of black slate, and chalky deposits. Organically farmed using sheep to keep the grounds and compost for the soils, the average age of the vines are 60 years. After hand harvest with selective picking of the grapes, the grapes are fermented with indigenous yeasts. Afterword the wine is matured for 12 months in concrete tanks. When poured, garnet hues with purplish reflections shine through the glass. Aromas of fragrant guarrigue herbs such as rosemary and thyme are matched by smokiness and fruit driven tones. The palate is vivacious, with hints of  pepper, black fruit, and spicy aromas. This is matched by a mouthfeel that has remarkable density without being weighed down in the mouth. This wine is perfectly matched with spicy dishes such as pepper steak, couscous, duck breast with Espelette pepper, paella, lamb curry, etc. Ageability 8-10 years. 75 % Grenache noir, 10 % Mourvèdre, 5 % Syrah, 3 % Cinsault, 2 % Clairettes Roses.

“The 2016 Gigondas Cuvee Combe Sauvage rivals some of the domaine's bottlings from Châteauneuf du Pape, offering subtle black cherry and plum fruit, a full-bodied, richly concentrated and velvety-textured palate and complex hints of cola, spice and mocha on the lingering finish. It's immediately approachable, but it should still age well for at least a decade.”–93 Points, Vinous Media
