About the Winery

The domaine is situated at an altitude of 150 meters above sea-level—a high point on this coastal appellation where maritime breezes cool the arid climate. Fourteen hectares of red earth, clay, sand, and gravel rest upon sturdy limestone bedrock. Brow-beating excavation and focused determination alone have built these vineyards. Agnès still has early photographs of the Mauric family, who lived here before the Hocquards, working the soil. Knee-deep into the red earth, behind heavy plows, vineyard workers toiled to bring this land to its current glory. (The tradition continues even today.) The copious rock served as sturdy material for building the house and walls that surround the property. The limestone has most importantly left its trace in the wines, instilling them with tremendous complexity, long length, and fresh elegance that makes them ideal for cellar-aging.

About the Wine

Harvesting is done by hand, which allows for the juice to be obtained by direct pressing. The vinification process occurs in stainless steel tanks for approximately six months, depending on vintages. The rosé also does not go through malolactic fermentation, allowing for quality assurance. The hue, which is soft to the eye, evokes the reassuring warmth of the landscape of Provence. Very subtle, the aromas exude both tonic and ripeness. A tender sensation on the mouth feel, this juicy wine allows for a wide range of dishes – from fruits to spicy dishes.

About the Winery

In the vision and mission of Rousseau Freres, they want to impact the terrior and viticulture, as well as have an impact on the method of working their vineyard. This includes: respecting the environment, by valuing the work of the winemaker, and work towards better quality grapes. The creation of a wine of the highest quality starts with the work the vineyard while respecting the natural environment. Located on a plateau overlooking the Indre River, the vines are planted mostly on siliceous clay and siliceous sand soils with a large amount of surface pebbles


 About the Wine

A terrior that consists of mostly siliceous clay with a large amount of surface flint, the Noble Joué is a combination of three pinot grapes called "Noble": 50% Pinor Meunier, 35% Pinot Gris and 15% Pinot Noir. The 3 varieties are turned into wine separately.
Pressed immediately after harvest, the grapes give a vin gris called "oeil de perdrix" (partridge eye).
Fermentation is developed at a temperature between 64 and 68 °F in stainless steel tanks with cooling by coils. This lasts for 1 to 2 months without yeasting followed by an aging on lees for 3 months with batonnage (stirring the lees) for the wine to fill out and develop more aromas.

About the Winery

The Mas de Cadenet is a typical Provence domaine right down to its name, which means "estate where junipers grow." Situated at the foot of the Sainte-Victoire Mountain, the domaine symbolizes tradition and a longstanding love story between a family and its land. The Mas history began in 1813, when it was purchased by Jean-Jacques Négrel and his brothers. Yet fragments of Roman amphorae found on the estate prove that wines were produced here even in antiquity.

 

About the Wine

This award winning Rosé from the foothills of Sainte Victoire can be found in some of the very best Michelin starred restaurants throughout France, and with good reason. It is exactly what you would expect of a very serious Provencial Rosé: dry, wonderfully delicate, with a lovely salmon color and a complex fruit and floral bouquet. A traditional juice with layered aromas on the nose. On the palate, it has a fresh yet rich, smooth, well-balanced taste. We will be drinking lots of it this summer. Stunning value for a wine of this caliber.

Cocktail Recipe of the Week:

Strawberry Pimm's Cup


For an extra trick, soak the juiciest strawberries in Pimm’s overnight in the fridge. It’s totally not necessary but use both the liqueur and the berries in the drink. Also use ginger beer instead of ginger ale because it’s always what I would choose. Spicy and sweet! And refreshing!

It sounds like there is loads going on – and there is – but it works. It tastes like sunshine and hot days and ice cubes.

Cheese of the Week:

Fromager d'Affinois

This French innovation may look like pudgy brie, but it's actually much creamier. The mild, buttery flavor has a sweetness that goes very well with champagne and fresh fruit. Fromage d'Affinois may remind you of a triple-creme, so loaded it is with silky fat. But that texture is achieved by ''ultra filtration,'' which breaks down the fat molecules in the milk in order to further disperse them through the paste. The result is a thick, nearly whipped spread of tangy, milky goodness.
