About the Winery

The members of the Giuseppe Mascarello family have been growing wines for more than a century and a half, first as farmers running the Manescotto estate in the village of La Morra for the marchesa Giulia Colbert Faletti di Barolo, and then on their own property since 1881. The Mascarello family property extends over 15 hectares of vineyards, all located within the Barolo wine-growing area. Some, like the MONPRIVATO vineyard, can now be said to be a part of the family history, while the grapes grown on others were first purchased by 4th generation Mauro before–having had the opportunity to ascertain their quality–he managed to buy the vineyards for the estate. The grapes from each single vineyard are vinified separately, a procedure that allows for the making of wines of the highest quality and with their own particular properties, varying from vineyard to vineyard. The name of the vineyard and the village where it is located are given on the label of each wine.

About the Wine

With vines perched on Santo Stefano hill in the village of Monforte d’Alba, the grapes are harvested in the beginning of October, then vinified traditionally followed by ageing in medium-sized Slavonian oak barrels for around 6-8 months. When poured, expect garnet red hues with purplish highlights to shine through the glass. On the nose anticipate intense, fruity aromas of ripe grapes. The wine has an impressively round mouthfeel with well-balanced tannins and beautiful structure. Perfect to accompany Hors d'oeuvres as well as entrees of red meats.

About the Winery 

The wines of François Pinon are considered among the finest of Vouvray. Eight generations of winemakers since 1786, François, a former child psychologist, took over the estate from his father in 1987, and has steadily made a name for the estate over the past 10 years. He is a serious winemaker whose main focus is "to keep the typicity of both the appellation and the vintage" in all his wines. 

The vineyards are in the corniche of the Vallée de Cousse. The soil is clay and silica on a base of limestone (tuffeau) with flint (silex) and the area is rated among the top sites in the appellation for Vouvrays of distinction and long life. Pinon follows a discipline of plowing the vineyards, not using chemical fertilizers and pesticides and, of course, he harvests by hand and uses no cultured yeasts. All new plantings are done by selection massale and no nursery clones are used; the vines are an average of 25 years old. The estate has been certified organic since 2011. 

About the Wine

After being hand-picked and pressed, the juice is stored in large vats for 12-24 hours, while the solid matter settles to the bottom of the tank. When the juice is clear, it ferments without the addition of yeast. Tunneled into the rock of the hillside, the cellars house oak barrels and stainless steel tanks, enabling Pinon to balance winemaking between still and sparkling wines. The wines remain on their fine lees until Easter. After one rack and a filtration, they are bottled over the course of April.

With vines that are exposed east-southeast, the average age of the Chenin blanc vines are 40 years old. Underneath are clay and black flint soils that are over a limestone bedrock. On the nose one can expect to find aromas of stone fruits and limestone. This matched with a palate which is fresh and mineral driven. The finish is dry and nuanced, with the backbone to follow. The aging potential for this wine can range anywhere from 20-30 years. Perfect to pair with charcuterie and fish such as crustaceans.

Cocktail Recipe of the Week: 

Cucumber Gimlet 

Ingredients:

1 (4-inch) chunk cucumber, seeded, peeled or unpeeled
 1/2 cup freshly squeezed lime juice, from 4 to 6 limes
 1/2 cup cold water
 1/2 cup simple syrup or light agave nectar
 Monkey 47 gin
 Ice cubes

Directions:

Coarsely chop enough cucumber to measure 1/2 cup. Slice the remaining cucumbers into thin rounds for garnish. In a blender or food processor, thoroughly purée the chopped cucumber, lime juice, water, and simple syrup or agave nectar. (Before juicing the limes, roll them against the countertop with the heel of your hand. It makes the whole process much easier.) Strain the pulp through a fine-mesh strainer. For each drink, mix up to 2 ounces (1/4 cup) Hendrick's with 2 ounces (1/4 cup) cucumber lime syrup. Add ice cubes and cucumber for garnish.
