Fulcrum is a winemaker’s winery, where no corners are ever cut. Originally from New Jersey, David Rossi is guided solely by his palate and a winemaking vision that has been developed over more than 20 years. From this vision, David produces a small portfolio of vineyard- and appellation-designated Fulcrum wines. At the heart of David’s vision for Fulcrum was the idea that more is not always better, and that a wine should offer a seamless combination of fruit expression, acid, tannin, alcohol, oak influence and age-worthiness. Since these wines are made in limited quantities, grapes from a handful of acclaimed sites in the Anderson Valley, Russian River Valley, Sonoma Coast, Carneros and Chalone appellations are all that is used.

About the Winery

Mario Schiopetto, son of Angela and Giorgio, was born in 1930 and grew up in the Fireman’s Hostelry which belonged to the family, experiencing in first person the life of a fireman and then that of a lorry driver. For years he accompanied and helped his father to select the wines for the Hostelry, eventually running it himself after the demise of his parents. Guided only by his personal taste and his love for wine, in 1963 Mario started to dedicate his time to the production and in 1965 brought out his first “Tocai”. Thus giving birth to the era of modern white wine in Friuli and transforming the conception of Italian white wine.

 

About the Wine

The wine is obtained exclusively from Pinot Grigio grapes, a varietal of French origin, cultivated in hilly areas, in soil which is of average marl composition. The bunches are small with round grapes red-grey in colour, and like Pinot Bianco it derives from a mutation of Pinot Nero. The grapes are hand picked, pressed in a soft press after which there follows a brief period of decantation in total absence of sulphur dioxide. The fermentation takes place in stainless steel tanks under a controlled temperature. The ageing takes place on the lees for 8 months. Golden yellow hues when poured, the aroma is fresh and inviting–with notes of banana and passion fruit. Savort on the palate, as terroir, with an intriguing freshness that gives drinkability and complexity.

About the Winery 

The Martinelli family has been growing grapes in the Russian River Valley since 1887. At the ages of 19 and 16, Giuseppe Martinelli and Luisa Vellutini left their small village in the Tuscany region of Italy and made their way to California looking for land to farm and start a winery. Giuseppe had been a winemaker in Italy and with his viticultural knowledge he was hired to plant a vineyard for a farmer in Forestville. 100 years later, the historic Martinelli Estate vineyards are farmed by Lee Martinelli, Sr., and sons Lee, Jr. and George Martinelli. The wines are made by winemaker Bryan Kvamme. These handcrafted wines are unfined, unfiltered, neither cold nor heat stabilized and may contain naturally occurring sediment.

About the Wine

Sourced from Giuseppe & Luisa vineyard in the Russian River Valley. Positioned at 110 feet in elevation, the certified sustainable vineyard is situated on Huichicha clay and hard pan soils. Planted in 1996, after harvest the grapes are destemmed and cold settled for 5 days. After which, the wine is fermented on the skins for 14 days with secondary (malolactic) fermentation in barrel. The wine is then aged for 11 months sur lies in French oak (40% of which is new).

“Medium ruby-purple in color, the 2019 Zinfandel Giuseppe & Luisa bursts with singular aromas of dried lavender and citrus peel, smoky, mineral-like undertones and loads of exotic spices over a core of wild berry preserves and peaches. It's incredible in the mouth, its full flavors delivered in a silky, ultra-fresh and lifted frame, and it finishes with loads of floral nuance. Wow! 1,653 cases produced.”–97 Points, Wine Advocate

“The 2019 Zinfandel Giuseppe & Luisa shows all of the intensity of the Martinelli wines, but with an extra kick of floral overtones and acid brightness to perk things up. Cinnamon, crushed red berry, wild flowers, mint and blood orange all run through this expressive, silky Zinfandel. The blend of Jackass Hill and Jackass Vineyard Zinfandel clones on four different rootstocks, which results in different ripening cycles and harvest times, all of which translates into notable complexity in the finished wine.”–95 Points, Vinous Media

Cocktail Recipe of the Week: 

Pink Champagne Margarita 

Ingredients:

1 cup Rezzadore Prosecco
2 cups pink lemonade
½ cup Casamigos Blanco Tequila
½ cup Cointreau
¼ cup lime juice
lime slices
Toppings — sugar sticks rimmed with pink salt and/or sugar

Directions:

Combine all ingredients. Rim glass with lime slice then dip in sugar or salt, and serve with sugar sticks. Cheers and Enjoy!

In the spirit of St. Mark's Street, we've taken a beloved traditional cheese and given it an avante garde spin. This complex, unctuous cheese is fragile—we keep it safe in a little red terra cotta crock. So cute. Plus, the crock helps St. Mark's double as a perfect, personal fondue. Top with some fig jam and walnuts—or be a purist and leave it as is—and pop the cheese in the oven for a few minutes. It will get oozy, melty, and glorious. Scoop up the creamy goodness with crusty bread for the perfect fall/winter treat.
