About the Winery

Chateau Pigoudet is located in the mountains of Provence, in the extreme NE quadrant of Coteaux d'Aix en Provence. Here, Pigoudet's 40ha of vineyards sit at 1,312 feet with full southern exposure, their fruit treated to the strong Mistral winds that blow from the north by Mont Vautubiere.

Surrounded by pine trees, the slopes, which are home to the best parcels, are planted to Syrah and Cabernet Sauvignon, while the plains support Cinsault and Grenache. With soils of chalky clay, small stones and gravel, the vines are sustainably farmed with organic treatments. Producing rose wines from all four varietals, Chateau Pigoudet possesses the idea climate, complete with diurnal shifts, that allows the fruit to gradually ripen, yielding refreshing and aromatic wines.

About the Wine

All fruit is harvested at night, pressed and left on the skins for seven days at 32F degrees. Vinifying their rosé wines via direct press, Chateau Pigoudet uses natural yeast on fruit from 35-year-old vines that are sustainably farmed. Each varietal is fermented separately, then blended for each cuvee. Elegant upon first sip, this is everything you’d want and expect from a Provence Rosé. Delicate and well-balanced on the palate, expect minerality on the finish. This rosé will hold up to all of your favorite summer foods, perfect for that time of year when you grill everyday. 46% Grenache, 21% Cinsault, 11% Syrah, 10% Cabernet, 9% Rolle, 3% Ugni blanc

About the Winery 

New discoveries that delight seem to be a rarer and rarer occurrence in Burgundy. For the most scrutinized wine region in the world, one would think that the element of surprise would eventually disappear. And yet there the importers were one afternoon in the beautiful cellars of Domaine Jean-Marc Millot, tasting with winemaker Alix Millot and her father Jean-Marc, not being able to wipe the grins from their faces. Burgundy simply does not get more delicious than these wines, and so they knew that we had found a true gem.

Jean-Marc Millot has been growing grapes and making estate bottled wines since 1992. With an amazing lineup of vineyards under his name, including 3 Grand Crus (Echezeaux, Grands Echezeaux, and Clos de Vougeot), it was clear this domaine was headed towards greatness. It wasn’t until his daughter, Alix, arrived in 2014 and took on the full grape growing and winemaking responsibilities that this greatness was achieved. The wines have that rare ability to provide immediate carnal pleasure, while having the stuffing to age for decades. This is truly one of the most exciting finds in Burgundy.

About the Wine

Coming from the village of Premeaux, just south of Clos de L’Arlot–this wine is a direct result of three parcels: ‘Vignottes’,‘Vaucrains’, and ‘Essards’. 80+ year old vines are situated on clay limestone soils. After harvest, the wines are fermented with indigenous yeasts and aged in 10% new oak barrels. Bottled unfined and unfiltered. When poured, this wine is concentrated and structured with perfectly balanced acidity. The firm tannins mingle with generous and complex layers. This gives way to ripe, crunchy blackcurrants, blackberries, cherries and violet.

About the Winery 

Domaine Yves Martin is a small, family-run estate with 17 hectares in the famed town of Chavignol, the domaine has been in full conversion to organic. Yves is a remarkable producer from Sancerre whose philosophy helps to create exceptional wines that are packed with flavor. The vines grow in each of the two famous terroirs of Chavignol: “caillottés,” which is stony and chalky; and “terres blanches,” which is composed of clay and limestone. The result is a mineral-laden, refreshing Sancerre with citrusy lime notes and a lingering finish.

About the Wine

Coming from an average of 30 year old vines. After harvest, the grapes are pressed and run off by gravity. Natural fermentation on indigenous yeasts in small stainless steel tanks with controlled temperatures. Aged for 6 months on fine lees with regular bâtonnage. When first poured, a delicate and elegant nose reveals hints of peach, pear and white flowers. The mouth is rich and well-balanced, enhanced by a nice minerality, complexity and a lingering long finish.

Cocktail Recipe of the Week:

Tabernacle Crush 

Ingredients:

 1/2 Large Peach, Sliced
6 Small Basil Leaves, Plus More for Garnish
1/2 Ounce Fresh Lemon Juice 
1 1/2 Ounces Monkey 47 Schwarzwald Dry Gin
1 Ounce Lillet
1/2 Ounce Simple Syrup
Ice
Club Soda

Directions:

In a tall glass, muddle the peach with the 6 basil leaves and the lemon juice.

Add the gin, Lillet and then simple syrup.

Add ice cubes and top with club soda.

Garnish with basil.

Tickler is crafted from local pasteurized cow's milk harvested from the lush Devon milk fields. After the 40 pound blocks have been made with traditional cultures they are aged a full 18 months, during which an unusual depth of tangy, sweet flavor develops. The cheeky company loves their award winning cheddar so much that they specially created a beer that provides the ultimate pairing. A bitter blond ale should do the trick of balancing Tickler's nutty sweetness.
